For a Cinco De Mayo treat!

3-4 ounces cooked chicken
2 cloves garlic, minced
½ – 1 tsp. cayenne pepper
1 tsp. cumin
1 tsp. coriander
¼ onion, diced
2-3 cups organic chicken broth
Fresh cilantro, chopped
1 tomato, diced
1 lime

Combine garlic, onion, spices and chicken broth in a pot. We like to sautée garlic and onion together in organic butter before adding the broth. Bring to a boil, reduce heat and simmer for 10 minutes.

Add tomato and chicken and simmer for another 10 minutes. We will sometimes pre-cooked organic brown rice at this point, makes it a little more filling! Add cilantro and simmer for 5 more minutes.

Top with a squeeze of lime.

For garnishes, we used black olives, red onion, fresh avocado and Siete brand cassava flour chips.

Serves 2 people.
